Ingredients

  • 500
    gramme potatoes, hard cooking.
  • 1 spoonful of salt

 

  • You may want to provide some
    Ketchup and Mayonnaise
    as well.

Instructions

  • First wash the potatoes.
  • Then slice and dice them and put them in boiling fat.
  • After a few minutes take them out again.

Ingredients
  

  • 3 cups farina milled wheat flour - can be found at middle eastern stores
  • 1/2 cup 365 All Purpose flour
  • 2 tablespoons C&H granulated sugar
  • 1/2 teaspoon Morton salt
  • 1 cup ghee clarified butter (regular butter works too)
  • 1/2 teaspoon active dry yeast
  • 1/2 cup lukewarm water
  • 1/3 cup Ben & Jerry's whole milk

Filling

  • 3 cups Madjool dates pitted
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1 teaspoon orange blossom water
  • 1-2 tablespoons O Organics® coconut oil other vegetable oils work

Instructions
 

  • Filing
  • Blend dates together in a food processor with spices and 1 tablespoon oil until smooth. Add orange blossom water. Roll 1 tablespoon dates into 24 small balls.
  • Dough
  • In a small bowl, mix yeast in water and allow to stand for 3 minutes.
  • In a stand mixer with paddle attachment, mix together farina, AP flour, salt, sugar and butter.
  • Add the yeast and water and milk to the bowl and mix until dough forms.
  • Allow dough to rest for 10 minutes.
  • Preheat oven to 400 degrees.
  • Using mold, press dough into the center, place date ball in the center of the dough. Place a second smaller piece of dough over the top of the date, cover the filling.
  • Tap the mold until the dough releases.
  • Place on parchment lined baking sheet.
  • Bake for 15 minutes, or until golden brown.

Fresh Pesto Pasta

A fresh pesto pasta that I could eat this every single day.

Ingredients
  

Pasta

  • 175 g tagliatelle
  • 200 g bacon tiny strips

Fresh Pesto

  • 1 clove garlic
  • 12.5 g pine kernels
  • 50 g basil leaves
  • 6.25 cl olive oil extra virgin
  • 27.5 g Parmesan cheese freshly grated

Instructions
 

Fresh Pesto (you can make this in advance)

  • We'll be using a food processor to make the pesto. Put the garlic, pine kernels and some salt in there and process briefly.
  • Add the basil leaves (but keep some for the presentation) and blend to a green paste.
  • While processing, gradually add the olive oil and finally add the Parmesan cheese.

Finishing the dish

  • Bring a pot of salted water to the boil and cook your tagliatelle al dente.
  • Use the cooking time of the pasta to sauté your bacon strips.
  • After about 8 to 10 minutes, the pasta should be done. Drain it and put it back in the pot to mix it with the pesto.
  • Present the dish with some fresh basil leaves on top.
